New Kid on the Block: Just Baked! Nowakowski

“We’re one of the most famous chains in Poland,” says Tomasz Nowakowski, of the fourth generation of Nowakowskis to be in the bakery business. Founded in 1925, the company has around 50 stores in Poland, and now the family has decided the U.S. is ripe for expansion. The first Just Baked! Nowakowski store stateside is now open on W. Broadway, in what was most recently Wicked Juice + Kitchen; the next one will open in the World Trade Center mall by year end, followed by a third in Midtown. “We’re planning to have six stores in New York City by mid-next year,” says Nowakowski.

The offerings are the same as in Poland: sandwiches, salads, pastries, cakes, breads, and coffee. “Everything is baked in the store and sandwiches are made here, too.” Bagels will arrive next week, and the menu will change from week to week, with new products added seasonally.

  1. While the bread is baked fresh at the store everyday, I was told the “dough is flown in from Europe.” (I presume from Poland.) I found this very odd…and will deter me from going back.

    • Odd? That’s the best thing I’ve heard — will make me 100% want to go. European wheat is superior to American (and I’m just a white guy from America)

  4. @MME – that should not deter you. It’s quite common to have dough shipped as dealing with it is costly and takes a lot of space. Frozen dough is just as good as fresh and this will be more authentic. Greek from Greece (or whatever they are called) has the same model.

    • I wish them well, as I do any new business in our neighborhood. The bread was good. Still, I prefer eating local as much as possible.

  5. Looks promising…I wonder if they have any vegan options.
    Always on the lookouts for good vegan pastries!

    (My favorites are from PeaceFood on Union Square, but haven’t found anything similar in TriBeCa area…)
