A while back, I heard a rumor that popular Vermont-based American Flatbread is in talks to open in the old Hudson Square Café space at 480 Canal (at Hudson), so I called the company. “You are on top of it, aren’t you?” said founder George Schenk. He confirmed that the company is negotiating with the folks at Tribeca Rooftop (on the top two floors of 2 Desbrosses, which is the same building). “We have a shared vision of bringing American Flatbread to Tribeca,” explained Schenk.
The folks at Tribeca Rooftop didn’t want it public yet because the deal hadn’t officially been done. And it still hasn’t, but the application for a liquor license is on June’s CB1 agenda, bringing it all out into the open.
If you’ve never been to American Flatbread—there are outposts in Vermont, Virginia, and Oregon—it’s excellent pizza, with an emphasis on organic and sustainable ingredients and environmentally aware packaging (it also has a frozen flatbread line). Let’s hope it works out!
