••• Max has introduced pizza to its menu. Owner Luigi Iasilli explained to me that he had always wanted to offer pizza—since opening the original Max 13 years ago—but he needed to be able to focus on developing the right recipe. He’s using King Arthur flour, and allowing the dough to rise twice—the resulting crust is sturdier and airier than in a Neapolitan pizza, but the edges have that wonderful chewiness and char that someone like me demands. There are 10 varieties, or you can choose your toppings. And Max is delivering them, too.
