A lot of folks out there didn’t think this day would come, but Dylan Prime reopens for dinner and drinks tonight after a thorough renovation. You’ll have to take my word for it—when I stopped by on Monday afternoon, there was still enough re-entry chaos that I couldn’t take photos beyond one in the lounge area above, but the restaurant looks great. And there are now three private dining rooms, seating up to 14, 30, and 35 people.
The new menu is below. Owner John Mautone explained that while steak will always be a specialty, they’re expanding its range, with more seafood and more composed entrées from $24 to $29 and a greater emphasis on sustainability and farm-to-table relationships. In the lounge, meanwhile, you can expect an extensive raw bar and housemade charcuterie. And according to the press release, the bar menu will include a “build your own” martinis with olives stuffed with pork belly, short rib, lobster, or oyster.

Can’t believe they took the steak tip fondue off the menu. This was my favorite restaurant.
