Blue Bottle, the third-wave-coffee chain acquired by Nestlé last year, is opening a third café in this area (along with the outpost at 4 World Trade Center and the forthcoming one at the Walker Hotel Tribeca). A barista at another location told a tipster that she’ll be starting up the shop at 75 Varick next week. (The company’s website lists the café as “coming soon”; the Walker Street Hotel café isn’t mentioned at all….) The 75 Varick building, also known as 1 Hudson Square, fronts Varick, Canal, and Watts; I don’t know exactly where the shop will be, but no matter what, it’s good news for the folks upstairs at New York Magazine…. UPDATE: The folks at the security desk said that they thought it was probably off the main lobby on Varick, which is currently undergoing a renovation (second photo below).
