Jolene Howard spotted a jobs listing for a new “artisanal food and beverage market with a hidden cocktail bar” taking over the former Union Bar + Kitchen space on Spring between Hudson and Renwick.
Called Pine & Polk, the restaurant/store will have a speakeasy concept where the retail portion fronts the cocktail bar with some commonalities: for instance, favorite products in the store will be featured in cocktails and glassware in the bar will be sold in the shop.
“There will also be hidden references that patrons can discover throughout their journey within each space,” wrote Alyssa Golub in the job listing. Her partner in the business is Lindsay Weiss. “Hospitality will be a key focus, making each patrons’ experience memorable regardless of which space they visit.”
Golub is a sommelier and a graduate of Cornell’s hospitality school; Weiss is a marketing pro who has worked with the James Beard Foundation. They are opening this spring.
Union Bar + Kitchen was opened in 2014 by BPC resident Jonathan Renert, who took advantage of the ceiling heights and added the garage doors on the front. The restaurant closed in May 2019.

Sounds great. Hopefully their retail grocery & prepared food selection is solid. North Tribeca/Hudson Square is pretty lacking in that department.
