August 7, 2025 Restaurant/Bar News
L. caught the “R” on the window at 205 Hudson, the building on the southwest corner of Canal. I had to dig way back to follow the news there — for a while it was scheduled for an expansion spot for Tribeca 360/Rooftop, but this, it turns out is the previous proposal: ChefScape, a food business incubator founded in Virginia that has developed food trucks and ghost kitchens here, among other projects.
The plan for the space now is called Rosa Wine Lounge, and it’s a bar and restaurant offering artisanal wine, craft cocktails, and Latin-inspired tapas. The founders are Lorena Rivera and Rob Batchelder, the team behind ChefScape, and the executive chef is Angel Sanchez.
ChefScape developed a meal-prep program during the pandemic that delivered more than 5.7 million meals to senior citizens in New York City. In 2021, the opened a ghost kitchen on Houston Street in Soho. And in 2022, they opened a large-scale meal prep and high-volume co-packing production facility at 205 Hudson — the same building as the wine bar — where they have 6000 square feet of kitchen and 4000 square feet of packing space. They also have a meal prep facility on Maiden Lane.
More when they open.
