Delivered a two days ahead of time is PopUp Bagels, the very popular bagel shop that has made Tribeca its 25th location. (There are seven others in the city.) That’s founder Adam Goldberg above — he was suitcase-in-hand on his way to open a new shop in Atlanta. (He founded it in 2020 in Westport, CT, as a pandemic project.)

They have a different business model: if I am getting this right, you can only order combos of bagels + schmears — and the choices are three or six bagels with one 8-ounce schmear OR a dozen bagels with two schmears. (Those are in 8-ounce cardboard containers.) The schmear flavors switch out weekly; on Wednesday they had plain, scallion and lemon pepper cream cheese, a salted butter, and what I think was a cake-batter butter that had sprinkles in it. Bagel flavors are poppy, sesame, salt, everything and plain. Three plus the one schmear was $13.

The store has no seating and no counters, so this is a grab-and-go situation.

Bagels are so personal that I am loathe to even describe these. But here’s my two cents: The bagel I tore into was special: smallish, crispy on the outside, chewy on the inside. I did pick the most well-done out of the bag; the other two were paler. It did, however, fail my everything bagel litmus test in that “everything” does not in this case include salt. But dipping into the scallion cream cheese — silky with a balanced flavor — was a treat. And 8 ounces is a ton. N. was also there on the first day, and she said the lemon pepper schmear was “interesting and tasty, quite pungent, but maybe not on a bagel.”

NB: you can preorder, there are some drinks, and there’s a brunch pack for 18 that includes whitefish salad or smoked salmon for $130.

Any way you slice it (get it?) this is a fun addition to the neighborhood.
