New Kid on the Block: François Payard Bakery

I stopped by the new François Payard Bakery this morning—it’s in the Goldman Sachs arcade, across from Shake Shack—right after working out, and it’s a miracle I didn’t hoover up everything in sight. If you’ve never had a Payard croissant (at the Houston Street outpost, say, or La Colombe), you know what I’m talking about; they have ruined other croissants for me, at least in the U.S. The bakery is a patisserie in the Parisian style, serving not just pastries—including macarons—but premade sandwiches and salads. Everything is premade, actually, as the tiny café has no kitchen; the food comes from Houston Street. Payard himself, on hand to greet people, explained that part of the appeal of the corner location was that the truck can easily make two deliveries a day, early in the morning for breakfast goods and mid-morning for lunch. Don’t expect to see the chef on the truck, however—he shuttles among his New York City properties by Ducati. Personally, I wish FPB success to a point—if it ends up with enough locations to require posted calories counts, I’ll have to go in blindfolded.

François Payard Bakery is at 200 West St., 212-566-8300; fpbnyc.com. Its hours are Monday through Friday, 7 a.m. to 8 p.m., and weekends 8:30 a.m. to 5 p.m.

  4. I checked it out this morning. It is an excellent addition to the neighborhood.

  5. They had cakes and pies ready and individual slices to buy. Also there are premade sandwiches. Was there this morning and Payard was sitting around chatting with people.

  8. We went there yesterday, spent up a storm, and told them the only reaon we were there was because of the blog Tribece Citizen! :)
