Now we know what Daniel maître d’ John Winterman is up to…. The space that was Corton, and before that Montrachet, will soon be Bâtard (“a name that references the Montrachet wines of Burgundy”), Drew Nieporent told the New York Times. Heading up the kitchen is “Markus Glocker, an Austrian-born chef who worked in several Michelin-starred places, including Restaurant Steirereck in Vienna, Restaurant Eckart Witzigmann in Munich and Charlie Trotter’s in Chicago, and for Gordon Ramsay in London and New York.” So we can assume he’s good with difficult bosses…. The Times says that Nieporent said that “the food will be sophisticated but not fussy [and] late spring opening is planned.”
